As a native Vermonter, I grew up going to brunch on Sunday’s with my family and eating a big plate of pancakes covered in Maple Syrup. After my sister became gluten free and dairy free and I switched to a vegan diet, Sunday brunch became “Pancake Experiment Day,” where we would try to find the best pancake recipe for all of us to eat. Some were ok and some were down right terrible! We decided we needed a better recipe that the gluten-lovers could enjoy just as much as the gluten free and vegan family members. After countless batches, we did it! These pancakes are not only gluten free, dairy free, and egg free, but are so quick to make. All you have to do is add water and vanilla extract to get the most perfect pancake stack! And for all the waffle lovers out there, we’ve got you covered. This recipe is so simple, you just pour the batter into the waffle maker and have delicious waffles in minutes. No added ingredients or special treatment needed.
